Spinach and Quinoa Vegetarian Meatballs


  • 1 1/2 cups of quinoa, cooked
  • 1 cup of spinach, fresh
  • 1/4 yellow onion, finely chopped
  • 1 egg
  • 1/4 cup of grated mozzarella cheese
  • Salt & pepper to taste


  1. Preheat your oven to 400℉.
  2. Heat a pan to high heat. Add your spinach and onions. Sauté for 5-10 minutes, until soft.
  3. In a mixing bowl, combine all of your ingredients. Mix thoroughly.
  4. Form your mixture into balls, each one about 2 tablespoons. Set on a baking tray. Bake for about 25 minutes. Enjoy!
