- 1 1/2 cups of quinoa, cooked
- 1 cup of spinach, fresh
- 1/4 yellow onion, finely chopped
- 1 egg
- 1/4 cup of grated mozzarella cheese
- Salt & pepper to taste
- Preheat your oven to 400℉.
- Heat a pan to high heat. Add your spinach and onions. Sauté for 5-10 minutes, until soft.
- In a mixing bowl, combine all of your ingredients. Mix thoroughly.
- Form your mixture into balls, each one about 2 tablespoons. Set on a baking tray. Bake for about 25 minutes. Enjoy!
