- 2 ripe yellow plantains, peeled
- 2 eggs
- 1 tablespoon of baking powder
- 2 teaspoons of vanilla extract
- 1 cup of gluten free all-purpose flour
- Mango slices
Preheat your oven to 350℉ (177℃).
Put your plantain into a blender. Blend until there are no chunks visible. Pour into a mixing bowl and add all of the other ingredients (except for the mango). Whisk well.
Lightly grease a glass pan. Pour about half of your batter in and spread with a spoon until even. Lay enough mango slices on top to completely cover the batter. Some can overlap. Pour the rest of the batter over the mango slices and spread to get even. Bake for about 35 minutes. Enjoy!
