- 2 cups of cassava flour + extra for working with
- 1/4 teaspoon of salt
- 1 1/2 tablespoons of oil
- About 1 cup of water
In a mixing bowl, combine flour, salt, and oil. Whisk together. In a kettle (or regular pot), bring your water to a boil. Add it to your bowl a little at a time, while mixing. Stop add in water when it becomes a dough. Roll your dough into a ball and let it sit for 15-30 minutes under a towel.
Divide your dough into 8 balls, or more/less depending on how big you want your breads. Lightly coat each one in flour. Use a rolling pin to roll each one out to about 1/8 inch thick (about the thickness of a tortilla).
Heat a pan to high heat. Lay one bread on and let it cook for about 20 seconds, then flip it. Keep flipping frequently until the bread puffs up. Once the outside starts getting golden-yellow spots and begins to deflate, remove from pan and cover with a towel. Repeat for the rest. Keep covered until you are ready to serve them. Enjoy!
