
Ingredients
- 3 medium yellow squashes
- Salt to taste
- 1 cup of grated cheese
- 1 teaspoon of garlic powder
- 1/2 medium yellow onion, finely chopped
- 2 eggs
- 1/2 cup of almond flour
Directions
Heat a pan to medium heat. Add the onion. Cook for about 10 minutes, or until brown. While they are cooking, grate he squash with a cheese grater. Add it to the onions and sauté for approximately another 10 minutes. Use a cheese cloth or fine strainer to squeeze out as much moisture as you can.
Put the onion and squash mixture into a mixing bowl along with all of the other ingredients. Stir with a fork until the cheese is melted and it is like a wet dough.
Preheat your oven to 400℉. Spoon the mixture into even pancake-like shapes on a baking tray. Bake for 25-30 minutes, or until no longer wet and somewhat crispy. Let the fritters cool before serving.
