Sweet Potato Gnocchi


  • 1 large sweet potato
  • 1 cup of grated cheese
  • Salt to taste
  • 1-1 1/2 cups of all-purpose flour


Peel your sweet potato. Cut it into smaller chunks (they will be mashed, so the shape doesn’t matter) and boil it until soft (about 20 minutes).

In a large bowl, mash your potato with a fork. While it is still hot, add in the cheese. Once mashed, add your salt, and add your flour little by little while kneading. Stop adding flour once you have a consistency similar to pizza dough.

Lay a sheet of parchment paper on a flat surface. Take a handful of your dough and roll it out into a long stick, about 1 inch wide. Make cuts along it, about 1 inch apart. You should be left with several even squares. Repeat this process with al of your dough. Now, take a fork and gently press on the top of each one, making them an even thickness and adding some lines.

Bring a pot of water to a boil. Put about 6 pieces in at a time, making sure they are not touching. Let them boil with the lid off until they rise to the top. Remove them with a slotted spoon and let them cool on a cake rack. Enjoy!!
