Healthy Nut Butter Cups Completely From Scratch (Gf, V, Paleo)


Ingredients

  • `1 cup of almonds
  • 1/2 cup of sunflower seeds
  • 1/4 cup of coconut oil
  • 1 tablespoon of honey or maple syrup
  • 1 teaspoon of sesame seeds
  • 2/3 cup of cacao butter
  • 1/2 cup of cacao powder
  • 2 teaspoons of powdered sugar or liquid sweetener

Directions

Put the almonds, coconut oil, and honey in a blender. Blend for about 6 minutes until smooth. Add sunflower seeds and sesame seeds and continue to blend until well-combined. Your mixture should not be runny like peanut butter.

Take about 1/2 tablespoon of the nut butter and push it into the bottom of a small cupcake cup. Fill as many cups as you can with the butter. Put them in your refrigerator to cool.

Next, combine the cacao butter and sweetener in a saucepan. Cook on low heat, stirring occasionally, until melted. Stir in the cacao powder and remove from heat.

Take your nut butter out of the refrigerator and remove from the cups, but be careful not to deform the nut butter or rip the cups. Use a spoon to cover the bottom of one cupcake cup with your chocolate. Put a piece of nut butter back in and drizzle more chocolate on top until covered. Repeat with the rest. Let them cool in the refrigerator before removing from cups. Enjoy!
