- 1 unripe, large plantain
- 2 eggs
- 2 tablespoons of coconut oil
- 3/4 cup of cassava root flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- Sunflower seeds (optional)
Take your plantain and cut off the ends. Make a cut that slices vertically through the plantain, but just through the peel. Pry it open and peel the skin away. Next, cut your plantain into rough quarters horizontally. Put it into a blender, and slowly add water until it blends nicely.
Once there are no chunks, pour into a medium bowl and whisk in the egg and oil.
In a large bowl, combine the cassava flour, sunflower seeds (if you want), baking powder, and salt. Pour your wet mixture in slowly, while whisking and continue to whisk until well-combined.
Preheat your oven to 350℉. Pour your batter into a medium/small loaf pan, and bake for around 1 hour. Take out, let cool, and slice. Preferably serve right away. Enjoy!!
