Vegan Bean Curry


Ingredients

  • 1 cup of cooked kidney beans
  • 1/2 teaspoon of garam masala powder
  • 1/4 large onion or 1/2 small onion finely chopped
  • 2 garlic cloves, minced
  • 1/4 teaspoon of ground turmeric
  • 1/4 teaspoon of smoked paprika
  • 2 plum tomatoes, diced
  • 1/2 teaspoon of veggie bouillon

Directions

In a medium skillet, add the onion and garlic. Cook until fragrant. Add the tomatoes and spices and cook for 5 more minutes until the onions start to brown. Then, add the bouillon along with about 1/4 cup of water (you don’t have to measure.) Stir consistently until the bouillon is dissolved. Finally, add the beans and cook until the water is mostly gone and the onions and tomatoes are fully cooked. Enjoy!
