One-Pan Kale Stir Fry (Gf, V)


  • 1 1/2 cups of kale, cut from stems
  • 2 carrots, diced
  • 1 minced garlic clove
  • 1/2 cup of onion, finely chopped
  • salt & pepper
  • 8 ounces of firm tofu (optional)
  • 1 tablespoon of rice vinegar
  • soy sauce or tamari
  • oil for pan
  • other vegetables (optional)


Heat a pan with a little bit of oil to medium-high heat. Add all of your ingredients to the pan and cook, stirring frequently with a spatula, for about 15 minutes or until the vegetables are soft. To speed up the cooking process of the vegetables, you can add about 1/2 cup of water at any point to steam. Let it evaporate fully before adding more or taking off heat. Serve hot. Enjoy!
