Super Easy Garlic Risotto (Gf, V)


  • 1 cup of rice (I like basmati, but mostly any kind works)
  • 1 teaspoon of veggie bouillon
  • 1 cup of water
  • 4 garlic cloves, pressed or finely minced
  • 1/2 cup of scallions, chopped
  • 2 tablespoons of butter (can be vegan)
  • 4 tablespoons of nutritional yeast or parmesan cheese
  • 2 teaspoons of onion powder


In a medium skillet, add your water and bouillon. Cook on high heat until the bouillon dissolves. Then, add the rest of your ingredients. Stir until well-combined. Reduce to a simmer. When the water runs out, add about 1/4 cup more. Repeat this process until the rice is fully cooked. Serve immediately. Enjoy!
