• 1/4 cup of lime juice
  • lime zest (optional)
  • 1 cup of water, not warm
  • 2 cups of masa harina
  • Filling of your choice

In a bowl, combine lime juice, zest, water, and masa harina. Mix with hands until doughy. Let it sit while you prepare your filling. The filling could be anything you choose. I used tofu, onions, garlic, cumin seed, paprika, turmeric, and tomatoes.

Once everything is ready, take about a tablespoon of dough at a time and roll it into a ball. Flatten it with the palms of your hands and put about a teaspoon of filling in. Gently fold the dough around it and carefully roll it into a ball again. Flatten it to about 1/2-1 inch thick and set aside. Repeat with the rest.

Heat a pan to medium-high heat with some avocado oil. Put a few of your pupusas on and cook on each side until crispy and/or golden brown. Add oil to the pan after every batch. Enjoy!
