Gluten Free Dhalpuri Roti (Split Pea Stuffed Flatbread)


Ingredients

Filling:

  • 3 garlic cloves, peeled
  • 1/3 cup uncooked split peas
  • 2 leaves of culantro (different than cilantro)
  • 6 cups of water
  • salt to taste

Directions

Bread:

Make Gluten Free Burrito Wraps but a double-recipe. Cover with a towel and set aside.

Filling:

Bring your water to a boil in a large pot. Add your peas and cook for about 15 or more minutes until they can be easily poked with a fork. Do not overcook them. Once they are done, drain the water from them using a strainer.

Add your garlic to a food processor. Blend until there are no large chunks that would not be pleasant to chew. Add your split peas and culantro. Blend until it still has a slightly grainy texture from the peas.

Putting together:

Depending on the size you want, cut your wraps into thirds, halves, or don’t cut them at all. Spread some of your filling in one of your wraps. Fold over and cook in a pan on medium meat. Cook like a quesadilla, until a little bit crispy. Repeat until you run out of wraps or filling. Enjoy!
