Jicama Pancakes (Gf, Veg)


  • 1 jicama (3 cups)
  • 1 lime
  • 1 small onion
  • 4 tablespoons of any flour (not almond flour)
  • 2 eggs
  • 1 potato
  • 2 teaspoons of salt


Peel your jicama with a high-quality vegetable peeler. It will take some effort, because the skin is very tough and jicama is a very dense vegetable. Cut it into chunks that will fit in your food processor. (it has to be one with a grater attachment.) Cut your onion and potato to the same size and grate all 3 vegetables using the food processor. Put it in a large bowl and squeeze the lime onto it. Next, add the rest of the ingredients. Lightly oil a pan and heat it ti high heat. Start by putting a glob of the jicama mixture onto the pan and flattening it with a spatula. Squeeze the liquid out of it before putting it on the pan. When it is brown on one side, flip it. When it gets to be kind of like a hash brown, it is done. Put them on a paper towel to get the extra oil out. Enjoy!
