Okra, Quinoa, and Onions (GF,V)


Ingredients

  • 1/3 cup of quinoa
  • 1/3 cup of water
  • 5 okras
  • 1/3 onion (any kind)
  • 1/2 teaspoon of veggie bouillon
  • 2 tablespoons of fresh chopped basil
  • Garlic powder
  • oil for pan

Directions

First, put your water and quinoa in a pot and put the lid on. Bring to a boil and add the bouillon. When the water is gone and the quinoa is soft, it is done. If the water is gone and the quinoa is still hard, add a little more water. Next, chop your onions into small pieces. Cut the tops off of the okras but do not chop the rest of them. Heat a pan to medium-high heat with oil (olive oil works great) and add the okras and onions. Cook for about 10 minutes until both types of vegetables are soft. Chop the okras after cooking and add the vegetables and quinoa to the bowl you will eat out of. Sprinkle the basil and garlic powder on top. Enjoy!
