- 2 cups of any pasta you choose
- 1/3 cup of silken tofu
- 1 tablespoon of shredded cheese or nutritional yeast
- 1 tablespoon of water
- 1-3 garlic cloves, minced
- salt to taste
- Any vegetables that you like
Follow the directions on the box for your pasta. while you are waiting for the water to boil or for the pasta to cook, heat a small pan to medium heat and put your minced garlic in. I suggest using a garlic press. Cook until very fragrant and put it into a food processor. add the tofu, water, salt, and cheese or nutritional yeast. Blend until just blended (about 5-10 seconds) and leave it until the pasta is ready. When it’s ready, put it in the serving bowl and stir your sauce and vegetables in with it. Enjoy!
