4-Ingredient Vegan-Paleo Macaroons


  • 1 1/2 cups of shredded coconut (unsweetened, unsalted)
  • 1/4 teaspoon of vanilla extract
  • 1 tablespoon of maple syrup
  • 1 teaspoon of melted coconut oil


Preheat your oven to 350℉ and lightly grease a baking tray. Blend your coconut in a food processor until nearly coconut butter. Add the rest of your ingredients and blend until just mixed. Pack your mixture together using your hands and scoop onto the baking sheet. Drizzle some melted coconut oil over them and bake for 10 minutes until slightly golden brown. Let cool. Enjoy!
