Stuffed Portabella Mushrooms (Vegan Grilling!)


  • 2 portabella mushrooms
  • salt
  • pepper
  • garlic powder
  • onion powder
  • avocado oil
  • carrots
  • asparagus
  • onions
  • Other vegetables of your choice

Temperature: Medium

Cooking time: About 10 minutes, but it is different for each vegetable.


First, combine the salt, pepper, onion powder, and garlic powder in a very small bowl. You should have about a teaspoon or two of it all together. Turn your mushrooms upside down and season them with the mixture you just made. The vegetables do not need much preparation because most of them will be cooked whole. The only thing you need to do is cut your onions into bite-size chunks and put them in a grilling basket. If you think your asparagus will fall through, feel free to do the same with it. Once you have everything on the grill, Lightly drizzle it with avocado oil. Be extra careful not to put too much on the mushrooms, because they will soak it up and get so moist that they start to fall apart. Cook everything to however done you and your friends like it (about 10 minutes) and then take it off. Put it on the serving plate and cut the vegetables that you grilled whole. Place it all on top of the mushrooms and add the extra seasoning if you have any. Enjoy!
