Vegetarian Paleo Blueberry Almond Bars


Ingredients

  • 1/2 cup of blueberries
  • 1/2 cup of chopped almonds
  • 1/4 cup of shredded coconut
  • 2 egg whites
  • 1 teaspoon of maple syrup

Directions

Preheat your oven to 350℉. Put your blueberries into a food processor and blend until still chunky but chopped. Next, prepare your crust. Seperate your egg yolks from the whites and put your whites into a kitchenaid with your maple syrup. Blend for 1-2 minutes until somewhat fluffy. Add your chopped almonds and coconut and blend until well-blended. Put your blueberries into a small glass pan and add your crust mixture on top. Spread and press it with a spoon and bake for 10 minutes and then set your oven to 400℉ and bake for an additional 15 minutes. Let cool before cutting. Enjoy!
