German potato Salad


  • 2 pounds of potatoes (any kind)
  • 1 onion, minced
  • 2/3 cup of vegetable stock
  • 1 tablespoon of vinegar
  • 2 teaspoons of mustard
  • salt & pepper if needed


scrub your potatoes and put them in a pot. Cover them in water (you can peel them if you want) and bring to a boil. once your water is boiling, cook them for 10 more minutes. In another pot, add the rest of your ingredients. Bring to a boil and then take the lid off. Turn down and cook for 5 more minutes. Drain your potatoes and let them cool a little before chopping. Put in the bowl you will serve it out of and put the onion sauce on top. Add the optional ingredients if you want. Enjoy!

  • fresh chives
  • fresh parsley
  • lemon juice
