Ingredients
- 1 cup of rice flour
- 1/2 cup of garbanzo bean flour
- 1/2 teaspoon of baking soda
- 2 tablespoons of coconut oil
- 1 tablespoon of sugar
- 1/2 tablespoon of olive oil
- 1/2 tablespoon of maple syrup
- 3/4 cup of plant-based milk or water
- chopped nuts (optional)
Directions
In a medium bowl, combine your ingredients. If your coconut oil is hard, heat it in a small pot until it mostly melts before adding it to your bowl. Mix until just mixed. Preheat your oven to 330℉. Pour your batter into a glass pan. (Preferably smaller than 9×13, but if that is all you have, that will work.) Bake for 20-30 minutes until a toothpick stuck into the center comes out with no raw batter. Let cool before cutting or serving. Enjoy!
