Healthier Vegan Pancakes


Ingredients

  • 1 banana or avocado
  • 1 cup of water
  • 1 tablespoon of vegetable or olive oil
  • 1 tablespoon of any sweetener that you have
  • 2 teaspoons of baking powder
  • 3/4 cup of rolled oats
  • 1 cup of all purpose baking flour
  • 1/4 cup of potato startch or corn startch
  • oil for pan

Directions

First, put your banana or avocado in a large bowl with your water. Use an immersion blender, or if you don’t have one, you can use an ordinary blender. Blend until smooth. Now, add the rest of your ingredients except for the oil for your pan. Mix until just mixed. Lightly grease your pan and heat it to medium heat. Flip your pancakes when they start to look dry on the top and take them off about a minute later. Enjoy!
