Aloo Gobi Masala (Cauliflower and Potatoes)

  • 1 head of cauliflower
  • 3 potatoes
  • garam masala
  • salt
  • olive oil
  • ground turmeric
  • 1/2 onion, finely chopped
  • 1 tomato, diced
  • 3 garlic cloves, minced
  • 1/4 cup of water

Ingredients For Optional Broth

  • 2 cups of water
  • 1/4 onion
  • spices of your choice

First, cut your cauliflower into florets. Cut your potato into bite-size chunks and heat a pan with olive oil to medium-low heat. Cook your cauliflower and potatoes until they start to get brown spots. In another pan, cook your garlic and onion for 2 minutes. Add your tomato and cook for 1 more minute. Add your onion, garlic, and tomato to your other pan and add your garam masala, salt, and turmeric and cook for about 10 more minutes on medium heat until all ingredients are well-cooked. Add your water little by little when it starts to get dry. Now, you can do the optional step of making the broth. Put all of the broth ingredients into a pot and boil for 6 minutes. Take out the onion. This will be poured over your cauliflower and potatoes when they are done but only if you choose to do this step. Enjoy!
