Simple Vegan Pho


  • whole cardamom
  • whole cloves
  • 1/2 onion
  • 1/2 ginger
  • whole corriander
  • sesame oil
  • 1 carrot
  • 1 potato
  • 3 1/2 cups of water
  • veggie bullion
  • rice noodles
  • bok choi, spinach, or kale
  • brown sugar
  • tofu


First, you will toast your spices. In a large pot, cook your cardamom, cloves, corriander, and a little bit of sesame oil for 3 minutes. Then, add your water, onion, ginger, and bullion. Let it boil for 10 minutes and then use a slotted spoon to take out your spices. Cook for 20 more minutes. Halfway through, add your greens and brown sugar. Cook your noodles and tofu seperately and add them at the end. Take the onions and garlic out before eating. Enjoy!
