High-Protein Veggie Burger

  • 1/2 cup of garbanzo bean flour
  • 1/4 cup of corn flour
  • 1 medium/large potato or 2 small potatoes
  • 1 cup of finely chopped walnuts
  • 3 tablespoons of hemp powder
  • 2 tablespoons of nutritional yeast
  • salt to taste
  • 2 tablepsoons of tomato paste
  • 2 tablespoons of olive oil
  • 1/3 cup of water

First, prepare your potatoes. Cut them into small chunks and put them in a pot where they just cover the bottom. Put enough water in to cover them and let them cook on medium heat until they are soft and the water is gone. Now, put them in kitchenaid with all of your other ingredients. Blend until smooth. Heat a large frying pan with a coat of oil to prevent sticking to medium/low heat. Divide your mixture into burger size and shape pieces. cook them in the pan for about 2-3 minutes on each side, using a spatula to flip them. Enjoy!
