Gluten Free Vegan Crepes (GF, V)


Ingredients

  • 1/2 cup of casava flour
  • 1/2 cup of buckwheat flour
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • 1 tablespoon of sugar
  • 1 1/2 cups of plant-based milk
  • 1/2 tablespoon of molassess
  • 1 tablespoon of vegetable oil
  • any filling (jam works well)

Directions

In a medium bowl, mix together all ingredients except for the plant-based milk. then, slowly add your milk until it becomes a very thin batter. You may need more or less than 1 1/2 cups of milk. Then, heat a frying pan with a thin coat of oil to medium/low heat. Pour the batter on a little at a time and use a spoon to swirl it around until it is super thin. Once the top gets dry, use a spatula to flip it over. Be careful not to rip it or fold it over. One tip that helped me was sliding the spatula under fast so that it gets under more of the crepe. It will cook for about 1 more minute after being flipped. Next, put them on a plate to cool. Once they are cool enough to work with, you can spread a filling of your choice on (jam works very well) and then roll them up. Enjoy!
