- 1 cup of rolled oats
- 1 tablespoon of sugar
- 3 tablespoons of coconut oil, vegan butter, or regular butter softened
- 1/3 of a banana
- 1/2 cup of milk or non-dairy milk
In a small/medium bowl, mix the oats, sugar, and butter. Then, in small bowl, use an immersion blender to blend the milk and the banana together until there are no chunks. Pour it into the bowl with the oats and use the same blender to blend until you have a doughy consintantcy. Preheat your oven to 400°. put parchment paper on a baking tray with a thin coat of oil to prevent sticking. Use a spoon to make bite-size cookies, about 1/2 inch thick. bake for about 15 minutes and then let cool. Enjoy!
