- 2 bananas
- 2/3 cup of corn flour
- 1 1/2 tablespoons of sugar
- 2 teaspoons of baking powder
- 2 teaspoons of vanilla extract
- 2/3 cup of milk (non-dairy milk works fine also)
- 2 tablespoons of vegetable oil
- 1/3 cup of chocolate chips
Put your bananas and your milk in a medium bowl. Use a fork to mash the banana. Then, add the rest of the ingredients and stir until just mixed. Preheat your oven to 350° and line a muffin tray with wrappers. Fill them to about 3/4 of the way full and let them cook for about 20 minutes. You may need more or less, depending on the size of your bananas. If a toothpick stuck into the center comes out with no raw batter and they are not squisy on the top, they are done. Let them cool for 5-10 minutes bfore taking them out of their wrappers or serving them.
Not all bananas are equal, so you may have to adjust the recipe if you have bigger or smaller bananas. If they are bigger, use 1/2 cup of milk insead of 2/3, and if they are smaller, use 1 cup of flour instead of 2/3. That is just an estimate though, so you can make other adjustments yourself if nedded. Enjoy!
