Extra Fluffy Vegan Pancakes (V)


  • 1 1/2 cup of any kind of flour (gluten free works perfectly fine too)
  • 1 tablespoon of tapioca startch, potato starch, arrowroot, or corn starch
  • 1 tablespoon of sugar
  • 2 tablespoons of any vegetable oil or vegan butter
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • water or non-dairy milk
  • 1 teaspoon of vanilla


Mix all ingredients exept for water together in a medium bowl. Do not mix violently. Then, slowly add water or non-dairy milk until you get a thick, but pourable battter. Do not overmix. Heat a pan with a neutral oil or vegan butter to medium to low heat. Test it by gently touching the handle. If it feels warm, the pan is heated evenly. Pour the pancakes on. watch them as they cook. when they get small bubbles, they are redy to flip. Let them cook for about 3 more minutes and then put them on a plate to cool. (you may add fruit to your batter before pouring it into the pan. This is completely optional, though)

Helpful tip

The pancakes will puff up in the pan. DO NOT flatten them down. It will ruin the light and fluffy texture that they are meant to have. Enjoy!
